Horchata Overnight Oats
HORCHATA OVERNIGHT OATS + MEXICAN HOT CHOCOLATE OVERNIGHT OATS
These became an overnight classic at our house! Packed with flavor and made using our Rookie Complete Plant-Based Protein.
Horchata Oats:
1/2 cup oats
1/2 scoop Rookie Vanilla Protein
3/4 cup rice milk
1/4 cup vegan yogurt (plain and unsweetened)
1 tbsp pure maple syrup
1/4 tsp vanilla extract
1/8 tsp salt
1/8 tsp cinnamon
Mexican Hot Chocolate Oats:
1/2 cup oats
1/2 scoop Rookie Chocolate Protein
3/4 cup any non dairy milk
1/4 cup vegan yogurt (plain and unsweetened)
1 tbsp pure maple syrup
1/4 tsp vanilla extract
1/8 tsp salt
1/8 tsp cinnamon
Toppings: fresh fruit, nuts, chocolate (I like grating a Mexican Hot Chocolate tablet like Abuelitas), vegan yogurt, vegan cajeta or caramel
INSTRUCTIONS
Combine all ingredients in a jar or cup and mix well. Cover with a lid then let sit in the fridge overnight. Once ready to enjoy, just open and top with your favorite toppings!
