Horchata or Mexican Hot Chocolate Overnight Oats

I have to tell you about these amazing overnight oats recipes that have become a staple in my house. They are packed with so much flavor and use the delicious Rookie Complete Plant-Based Protein.

First up, the Horchata Oats - with oats, rice milk, vegan yogurt, pure maple syrup, and just the right amount of cinnamon and vanilla extract. And then there's the Mexican Hot Chocolate Oats, made with oats, non-dairy milk, vegan yogurt, pure maple syrup, and a touch of cinnamon and vanilla extract, along with the rich flavor of Rookie Chocolate Protein.

You can top them off with fresh fruit, nuts, chocolate, vegan yogurt, or even vegan cajeta or caramel. Just mix everything together, let it sit in the fridge overnight, and enjoy!

Horchata Oats Ingredients:

  • 1/2 cup oats
  • 1/2 scoop Rookie Vanilla Protein
  • 3/4 cup rice milk
  • 1/4 cup vegan yogurt (plain and unsweetened)
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract
  • 1/8 tsp salt
  • 1/8 tsp cinnamon

Mexican Hot Chocolate Oats Ingredients:

  • 1/2 cup oats
  • 1/2 scoop Rookie Chocolate Protein
  • 3/4 cup any non dairy milk
  • 1/4 cup vegan yogurt (plain and unsweetened)
  • 1 tbsp pure maple syrup
  • 1/4 tsp vanilla extract
  • 1/8 tsp salt
  • 1/8 tsp cinnamon


Toppings: fresh fruit, nuts, chocolate (I like grating a Mexican Hot Chocolate tablet like Abuelitas), vegan yogurt, vegan cajeta or caramel

INSTRUCTIONS

Combine all ingredients in a jar or cup and mix well. Cover with a lid then let sit in the fridge overnight. Once ready to enjoy, just open and top with your favorite toppings!
