Banana Protein Muffins

These protein banana muffins come together in 10 ingredients and less than 10 minutes! I love keeping them in the freezer for the week and popping them in the microwave for busy mornings!

INGREDIENTS

WET

3 spotted soft bananas
1 flax egg (1 TB flax + 3TB water) or 1 egg
1/4 cup maple syrup or (1 cup applesauce)
1/2 cup almond or nut butter
1/4 coconut sugar (or granulated)
1t vanilla extract
1/4 cup granola (as topping)

DRY

1 1/2 cups oat flour (or almond flour)
1/4 cup Rookie Vanilla Protein
3 t baking powder
1 cup chocolate chips

INSTRUCTIONS

Preheat oven to 400 degrees F. Make your flax egg by mixing the ground flax and water and putting in the refrigerator to chill for 10-30 minutes. (You can also skip this step if you're using a real egg). In a large bowl, mix together all of your wet ingredients (including the egg). Add dry ingredients (except chocolate chips) and mix until just combined. Fold in chocolate chips. Add batter to lined or sprayed muffin tin (about 1/4 cup, or use a cookie scoop). Bake muffins for 5 minutes at 400 degrees, reducing heat to 350 and baking for another 15-20 minutes. Let muffins cool, and then serve!
