Banana Protein Muffins

This recipe is perfect for busy individuals who need a healthy breakfast on-the-go because these protein banana muffins are a quick and easy and made with only 10 ingredients and in less than 10 minutes. The muffins are made with Rookie Vanilla Protein powder and ripe bananas, making them a nutritious option to start your day. One of the best things about this recipe is that you can make a large batch and store them in the freezer for the week. Whenever you need a quick breakfast, simply pop one in the microwave and you're good to go! This recipe is a great way to meal prep for the week and ensure that you have a healthy breakfast option on hand every day.

INGREDIENTS

WET

  • 3 spotted soft bananas
  • 1 flax egg (1 TB flax + 3TB water) or 1 egg
  • 1/4 cup maple syrup or (1 cup applesauce)
  • 1/2 cup almond or nut butter
  • 1/4 coconut sugar (or granulated)
  • 1t vanilla extract
  • 1/4 cup granola (as topping)

DRY


INSTRUCTIONS

  1. Preheat oven to 400 degrees F.
  2. Make your flax egg by mixing the ground flax and water and putting in the refrigerator to chill for 10-30 minutes. (You can also skip this step if you're using a real egg).
  3. In a large bowl, mix together all of your wet ingredients (including the egg).
  4. Add dry ingredients (except chocolate chips) and mix until just combined.
  5. Fold in chocolate chips.
  6. Add batter to lined or sprayed muffin tin (about 1/4 cup, or use a cookie scoop).
  7. Bake muffins for 5 minutes at 400 degrees, reducing heat to 350 and baking for another 15-20 minutes.
  8. Let muffins cool, and then serve!
